There are no U.S. grade standards for Plantain. These instructions have been developed by the Specialty Crops Inspection Division to assist officially licensed inspectors in making inspections, writing certificates and to assist in the proper identification of specialty type fruits and vegetables.
Plantain (Plantano, Machos, Cooking Banana) while a member of the banana family, it must be cooked to be palatable. It is longer and thicker than regular bananas. The plantain is a staple in the diet of many people from the tropics. It is a versatile fruit because it can be used when mature and hard, soft and yellow or fully ripe and dark brown to black.
